Ingredients
  • 50 black mussels
  • 125ml dry white wine
  • 3tbsp butter
  • 2 gloves garlicfinely chopped
  • 1cup Parsley finely chopped
  • 1 tomatoskinned and chopped
  • 1pinch dried thyme
  • freshly ground black pepperto taste
  • 1 juice of a lemon
  • 1 cooked crayfishor 6 prawns
  • 250ml fresh cream
Instructions
  1. Put the wine in the Potjie
  2. Add the butter, garlic, parsley, onion, tomato, thyme, pepper and the mussels
  3. Cover and simmer slowly for approximately 15 minutes
  4. Sprinkle with lemon juice and add the crayfish or prawns
  5. Simmer for a further 10 minutes
  6. Add the cream
  7. Serve with French bread, chips or rice
