Ingredients
  • 1kg chicken thighs
  • 30ml cooking oil (or olive oil)
  • 3 medium onionschopped
  • 1tsp crushed garlic
  • 1tsp crushed ginger
  • 1cup water
  • 500g whole new (baby) potatoes
  • 3tsp curry powder
  • 2tsp turmeric
  • Salt
  • Pepper
Instructions
  1. Heat the oil in the pot
  2. Season meat with salt and pepper
  3. Brown the meat a few pieces at the time
  4. Remove from pot and set aside
  5. Fry onions, ginger and garlic until tender
  6. Add back the meat
  7. Add potatoes, curry powder, turmeric and water
  8. Add salt and pepper to taste
  9. Cover and simmer for approximately 90 minutes
  10. Serve with rice, banana slices (soaked in milk to prevent discolouring) and coconut
