Beef and Veggies Potjie
In this lovely Potjie extra salt is not needed as the soya sauce contains enough salt. As substitute for the sherry you may also use Port.
  • 1kg Stewing beefcubed
  • 1 Beef kidneycubed
  • 2 medium onionssliced
  • 125ml Dried apricotssoaked in water for 1 hour
  • 4 carrotspeeled and sliced
  • 2 Sweet potatoespeeled and sliced
  • 4 Medium potatoespeeled and halved
  • 6 Baby marrowsliced
  • 250ml Cabbagechopped
  • 1 tomatopeeled and sliced
  • 30ml Dried parsley
  • 30ml cooking oil
  • Black pepperto taste
  • 125ml Sweet sherry
  • 125ml Soya sauce
  • 5ml Black pepper
  • 3ml Dry mustard
  • 1ml Dry rosemary
  • 1ml Dry thyme
  • 1cube beef stock
  • 500ml Boiling water
  1. Heat the oil in the Pot and brown the meat and kidney till almost brown
  2. Add the onions and brown together
  3. Mix the ingredients of the sauce and add it to the Pot
  4. Stir well, cover with the lid and simmer for 1.5 hours
  5. Layer the dried fruit and then the veggies as they appear in the recipe
  6. Sprinkle some pepper over the tomatoes
  7. Cover with the lid and allow the Potjie to simmer for about 2 hours or until the veggies are done
