Beef and Beer Potjie
  • 1kg beef Filletcubed
  • 15ml cake flour
  • 5ml paprika
  • 15ml butter
  • 15ml cooking oil
  • 2 medium onionsthinly sliced
  • 15ml white sugar
  • 8 green beanssliced
  • 4 carrotspeeled and thinly sliced
  • 1 clove garlicfinely chopped
  • 5ml mixed dried herbs or marjoram
  • 375ml beer
  • 250ml beef stock
  • 1packet tomato soup powder
  • 1 bay leaf
  • 15ml vinegar
  • 10ml cornflour
  • salt and pepperto taste
  1. Combine the paprika and flour and place in a plastic bag
  2. Add the meat cubes and shake well to coat the meat.
  3. Melt the butter and oil in the pot and brown the meat over medium hot coals.
  4. Remove and set aside.
  5. Fry the onions and sugar, stirring now and then until the onions are tender.
  6. Add the beans, carrots and garlic and simmer for 5 minutes.
  7. Return the meat to the pot and stir in the herbs, beer, stock, soup powder and bay leaf.
  8. Replace the lid and simmer till the meat is tender (45 minutes to 1 hour).
  9. Stir occasionally, using a wooden spoon.
  10. Mix the vinegar and cornflour and stir in.
  11. Simmer until the gravy has thickened and season with salt and pepper.
